Ramen Carbonara
This is ramen carbonara. I’ll say it again. Ramen. Carbonara. It’s a dish that looks luxurious and effortful, but like most instant ramen dishes, it’s one that’s easy and quick to whip up in less than 15 minutes.
Just as you’d expect, the method of making this is pretty similar to that of the well-loved classic Italian carbonara. So get some thick bacon or guanciale, cut it up and fry it till brown and crispy. Then, in a big bowl, mix together an egg, an egg yolk, and a blizzard of parmesan or pecorino, along with a pelting of black pepper. Next, get your favourite brand of ramen, toss away the flavouring packets because you don’t need them, and boil up the noodles for 2-3 minutes.
Once the noodles are cooked, scoop it up and into the egg-and-cheese mix, toss in the crispy bacon bits along with a splash of the rendered bacon fat, and you’ll have a super easy, very cheesy, kinda cheeky meal that you’ll wolf down in seconds!
Ramen Carbonara

Ingredients
2 strips thick bacon/guanciale
1 egg
1 egg yolk
25g parmesan or pecorino cheese, grated, plus more for garnish
2g (½ tsp) freshly ground black pepper, plus more for garnish
1 pack Instant ramen
Method
Slice the bacon into little cubes (~1cm thick). Then, put the bacon into a frying pan, and place over medium-low heat to cook for 10 minutes, until brown and crispy. The bacon will slowly render out its fat and crisp up itself. Save both the bacon and the bacon fat for later.
In a large bowl, combine the egg, egg yolk, grated parmesan, and ground black pepper. Stir everything together into a sloppy sauce.
Cook the instant noodles according to the packet instructions. (They usually take 2-3 minutes in boiling water.) When the noodles are done, scoop it out of the water and put it into the bowl with the egg-cheese mixture. Immediately toss and mix the noodles in the sauce with tongs or chopsticks. This will cook and thicken the sauce and coat each strand of noodle. Add in a tablespoon of the bacon fat, along with all of the crispy bacon cubes, and give it a final mix.
Serve immediately, and garnish with some more grated parmesan and ground black pepper on top. Enjoy!
